Healthy Substitutes/Alternatives To Everyday meals

So I have been trying to think of different (yet healthy) ingredients that I can substitute into everyday meals. 
For example using brown rice instead of white rice or oats instead of bread crumbs.
Are there any new tips and tricks that can be beneficial and more healthy? Especially for the kids, since they notice the smallest difference?
